Karina's Roasted Butternut Squash and New Potato Salad Recipe

Recipe posted by Karina February 2010.

We found these tiny potatoes at the local organic market. Gold, red and purple bites of root vegetable goodness. If you cannot find such petite potatoes, use the smallest gold, blue and red potatoes you can find and cut them into halves or quarters to make them bite size. As for the squash, I used banana squash (see more on banana squash here), but butternut or even acorn squash would also be delicious.

First: Preheat the oven to 400ºF.

In a roasting pan combine:

Stir the winter squash and potatoes together and coat the squash with the olive oil and seasonings. Place the roasting pan back into the hot oven and roast until the potatoes and squash are fork tender and the squash is caramelized- about 15 to 20 minutes. Stir half way through to help brown all sides, and keep the squash from sticking.

1 bag (1 1/2 to 2 lbs.) tiny young potatoes or small fingerlings
Olive oil
1 clove minced garlic
1 teaspoon thyme
Sea salt and fresh ground pepper, to taste

Note: Slice the potatoes in half if they are larger than bite size.

Stir the potatoes to distribute the olive oil and seasonings. Roast for 15-20 minutes or so- till tender but not quite done- you're going to add in the squash and cook them longer.

Add in:

Half a banana or butternut squash, peeled and cubed
A drizzle of extra virgin olive oil
A drizzle of real balsamic vinegar

Instructions:

Note: Size matters. Larger potatoes and cubes of squash will take longer to cook than their petite cousins, so test with a fork and keep an eye on them.
When the potatoes and squash are tender, remove the pan from the oven and cool it on a rack while you wash and dry the salad greens.

Plate a mix of fresh, crisp baby spinach and spring greens.

Spoon the warm roasted squash and potatoes onto the greens. Dress lightly with a dab of your best extra virgin olive oil and balsamic vinegar. Top with fresh ground pepper.

Note: For those enjoying cheese, add a sprinkle of fresh organic goat cheese or a shaving of Parmesan.

Serves 4.

5 Gluten-Free Potato Salad Recipes

Gluten-Free Vegan Potato Salad - Simplicity

Potato Salad Love

I am thinking of you. As I pack. Folding linens into squares (next to impossible with fitted sheets). Wrestling with rebellious hangers. Cradling white soup plates in sheets of recycled paper. Boxing and taping and labeling our material life once again. Our seven year journey westward now migrating east. Back to the Cape.

Cape Cod, Massachusetts.

Where we first touched, shaking hands goodbye at the end of a six week painting class (it would take you two and a half years to call me and invite me for coffee).

Where I raked up a post-hurricane marriage and as I sorted through tree limbs and debris saw the biggest rainbow curve high above the destruction.

Where I set up my freedom cottage as a single mother, living in 350 square feet by wits and faith.

Where I learned to trust my instincts. And snip free the soft lies agreed upon.

Where you finally did call.

Where we began our marriage. Our life as parents. Best friends. Lovers. Painters.

Where I most feel at home. By the New England sea.

Returning. With sand in my shoes that I never shook free.

Gluten-Free Baked Sweet Potato Fries

Baked sweet potto fried, shoestring style
Easy, tasty gluten-free sweet potato fries baked with spices.

Sweet Potato Fry Love

Like my South Beach Diet inspired food blogging pal Kalyn, I'm a big fan of sweet potatoes. And sweet potato fries. Kalyn's recipe has a different spice blend than mine but our recipes are quite similar. Check out hers if you don't happen to care for my particular spices. Or get down-and-dirty personal and make up your own signature concoction.

Cooking is all about making recipes your own. Developing your own tastes. Your likes and dislikes. Cooking is flexible. And highly personal. It's not precise like, say, brain surgery. Unless you're baking something fussy. Baking folks swear by precision.

But I've never been that kind of cook.

I'm intuitive. I fly by the seat of my jeans. I look at a glistening picture of pasta and vegetables and I feel inspired.

I open my pantry and get juiced to play the What If? Game.

What if I take this ingredient and add it to that ingredient? I wonder. What would that taste like?

Then the fun begins.

How do you cook?

Do you wing it like Chet Baker? Or do you prefer a road map, with precise direction?

Gluten-Free Vegan Potato Leek Soup

Gluten-free dairy-free vegan potato soup
Creamy potato soup- no dairy needed.

Soup for an Insomniac

Twenty-nine hours. That's how long I've been awake. I could blame the full moon, big as a gleaming white soup plate hanging in the clear desert sky last night. Or the pollen. The hostile spiky spewing of hundreds of junipers rooted round our plucky little casita. Every time I drifted toward the promise of sleep I would sneeze straight up and fumble in the dark for a Kleenex, my throat as raw as Tom Waits' vocal chords after belting forth, Make It Rain. We're talking ragged.

It ain't pretty.

So excuse me if I keep today's ramblings short and sweet. I'm hovering outside my body- nineteen inches to the left of myself. Any moment now, I might spin off with the tumbleweeds and roll down the dirt road to the highway. I might not even mind, if I end up tumbling west, rolling into the City of Angels in my sleep, snoring down Sunset Boulevard all the way to Ocean Avenue and south to Venice Beach where I live a parallel life in an alternate universe surfing at dawn.

And if you see me, give me a sign.

Any sign will do.

As long as you dream walk the same blue wavelength.

But before I spin toward the rutted crooked highway I'll leave you with a perfect soup for spring. Stir it up when the March winds blow, and soothe your winter weary bones.

How to Make Your Own Potato Chips

How to make your own gluten free potato chips
Make your own potato chips.

Le Chip Roulette

Before I get to how to cook homemade potato chips and avoid the game we food allergic individuals refer to as Le Chip Roulette, I'd like to mention dreaming. Because I woke from some very strange dreams this morning. Dreams involving caveman chest hair and glistening inky fish and long distance songs on some radio left behind in an abandoned mining shack perfect for a David Lynch location shoot. Spandau Ballet, in fact- crooning, I know this much is tru-hoo.

It's day fifteen of the tenacious head cold I picked up in Los Angeles. And it's Friday the thirteenth. But I'm not so easily spooked. Old ghosts got nothing on this morning's weirdness. This is kindergarten stuff. Amateur hour. So I shook it off and brewed some tea.

I'm blaming high altitude and not enough fresh fruit.
